Easy Apple Cinnamon Muffins
Good morning, lovely friends! I hope you are having a great week! I’m so excited to share this delicious and easy apple cinnamon muffin recipe with y’all today. This time of year I crave apple recipes…along with pumpkin recipes. Do you do that too? Ridley’s been asking for muffins, so I whipped these up and they turned out so yum! And they made the house smell incredibly Fall-like. 🙂

Easy Apple Cinnamon Muffins
- 1 cup dry quick oats
- 1 cup all purpose flour
- 1 teaspoon salt
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1 1/2 teaspoon homemade pumpkin pie spice
- 1/2 cup applesauce
- 3/4 cup coconut milk {or any other milk}
- 2 eggs
- 2 cups Granny Smith apples, cored, peeled and diced {about two apples}
- 1/4 dried cranberries
- 1/4 chopped walnuts
- Cinnamon sugar for topping
In a medium mixing bowl, whisk oats, flour, salt, sugar, baking powder, pumpkin pie spice.
In a separate bowl, lightly beat eggs and add milk and applesauce. Add to dry ingredients and mix stir just until blended. Do not over mix. Gently fold in apples, cranberries and walnuts
Spoon batter into a greased muffin tin, dividing evenly among the 12 cups. Sprinkle with cinnamon sugar {I use coarse, raw sugar}. Bake in a 400* preheated oven for 15-20 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes before removing to a wire rack.
Store in an airtight container.

Will be baking these soon, I like that the recipe has quick oats and applesauce, and is without oil or lard! Will use regular pumpkin pie spice.
