Homemade Spaghetti With Goat Cheese
Good morning and Happy Monday! It’s been a while! I am so excited to share this delicious Homemade Spaghetti recipe that I created this weekend. It’s so, so good. I really can’t stop thinking about it. The best part is that it is made with spaghetti squash, so it’s really low carb and good for you! Hooray!

When the goat cheese gets warm and soft, it just melts in your mouth. Yum. Yum. Yum!
This recipe counts as Paleo, although those who are hard core, would rule out the goat cheese. To each his own. 😉
Homemade Spaghetti With Goat Cheese
- 2 spaghetti squash
- Olive oil
- Italian seasoning
- 1 pound sweet Italian sausage
- 1 pound ground beef
- 1 large onion, chopped
- 2 tablespoons butter
- 1 25 ounce jar spaghetti sauce
- 1 cup grape tomatoes, halved
- Salt & pepper
- Garlic powder
- Crumbled goat cheese
Preheat oven to 400 degrees. Prepare spaghetti squash for baking. Halve and scoop out seeds. Place three halves in a 13×9 baking dish. {Save the other half for another meal. ;)} Drizzle squash with olive oil and generously sprinkle with salt, pepper and Italian seasoning. Bake for 45 minutes or until fork tender.
In a small stockpot, saute’ onion in butter over medium-high heat. Add sausage, ground beef and a few sprinkles of garlic powder and Italian seasoning. Cook until browned. Pour in 3/4 of the jar of spaghetti sauce (more or less depending on what you want). Add grape tomatoes. Stir well.
Then add the spaghetti squash. I use a fork to pull all the “spaghetti” noodles apart. Mix and serve with goat cheese. YUM!
I have also made this and put it in a crockpot on low to keep it warm with the goat cheese on the side.
