Southwest Chicken Salad
I’ve been craving greens lately {probably because my iron is borderline low}, so I’ve been drinking green smoothies and eating salads. For our church potluck on Sunday, I decided to put together a Southwest Chicken Salad inspired by my sister’s delicious version!
Doesn’t that look delicious? Drool.
This recipe is very much an easy “eyeball” type recipe. Just whatever looks right will do.
Southwest Chicken Salad
- 1 pkg. organic romaine lettuce hearts, washed and torn
- 1 recipe Pan Roasted Corn, chilled
- 1 recipe Homemade Grilled Chicken Strips, chunked and chilled
- 1 can organic black beans, washed, drained and chilled
- 2 cups crumbled organic tortilla chips
- 1-2 avocados, chunked
- 2 cups, shredded cheddar cheese
- 1-1 1/2 cups Homemade Salsa
- 1-1 1/2 cups southwest ranch dressing {I made my own by combining my Homemade Ranch Dressing, 1-2 Tablespoons Homemade Taco Seasoning and a few dashes of hot sauce to taste}
You can serve this salad build-your-own style or you can put all the ingredients in a large bowl {reserving tortilla chips, salsa and dressing} and toss. Then add chips, salsa and dressing and toss immediately before serving.
If you’re feeding a crowd, simply double this recipe. It will feed an army.

I am making this — looks so delicious! I like spinach salads of all kinds — most commonly I add sliced almonds, grated parmesan, diced apples, crumbled bacon with either chicken, salmon or steak (depending on what is left over) and toss with olive oil and a splash of white wine vinegar. Simple and delicious!

That looks so tasty! I love salads, and my main criteria for a good one is lots of different veggies and a little bit of meat preferably (chicken, turkey) and a grain included too. I love a salad to be hearty enough for a full meal with nothing else needed. 🙂 THIS definitely looks like it will fit!

I love dishes like this… where it looks both “put-together” and “chaotic” at the same time. And I love the idea of mixing Ranch dressing with a little taco seasoning and hot sauce! I’ll definitely add that to the process next time I make Mexican or Southwestern food (really, any excuse to spice up Ranch will be used frequently).
