Apple Cake {Easy & Delish}
This past weekend, I made a delicious apple cake for our church potluck. I love that the cake recipe calls for four cups of fresh apples. Yum! I’ve also been on a caramel kick lately {see here & here}, so I asked my hubby if I should add a glaze and he said, “For sure!” I know y’all are going to love this apple cake recipe!
Apple Cake
- 2 eggs
- 1 cup coconut oil {or 1/2 cup oil or butter and 1/2 cup applesauce}
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon real salt
- 1 teaspoon baking soda
- 4 cups diced Granny Smith apples
Preheat oven to 350 degrees. Grease a 9×13 inch cake pan.
Beat oil and eggs until creamy. Add sugar and vanilla and beat well.
Combine flour, cinnamon, salt and baking soda together in a bowl. Slowly add flour mixture to the egg mixture and mix until thoroughly combined. The batter will be very thick. Fold in the apples. Spread batter into the prepared pan.
Bake for 45 minutes or until cake is done in the center. Cool.

Oh, how I love a potluck! We helped to plant a church a few years ago, and one of my favorite things about the church is that we have potlucks right after Sunday morning service twice a month. It’s such a fun time of fellowship!
One of my best friends makes an incredible apple cake, but I’ve never been able to get the recipe from her. Now I’ll have my own recipe! Note: she makes a glaze for it with maple syrup. The maple flavor works wonderfully with the apple flavor! Of course, so would caramel. . .but just in case you need some variety, you could try maple!

What’s my favorite apple recipe? My mom used to make something she called Apple Chunk Cake. It looked a lot like yours and had a caramel sauce that was used as a topping. Yum. My other favorite is my Grandma Sarah’s Apple Cake….just talking about it makes me want to bake some. Layers and layers of apple slices on top the most delicious cake. It is a treasure to have her recipe and make something for my grandchildren that she used to make for me.

Yummy! I made this yesterday and it turned out delicious. I may have been a little heavy on my flour measuring, and I used half applesauce, half olive oil, so mine was a little drier than your picture looks, but not bad at all. Today I added a maple glaze–3/4 cup powdered sugar, 2.5 tablespoons maple syrup, and 1 tablespoon water. It made it even better! I’ll definitely be making this next time it’s my turn to bring snacks at church–thanks!

I”m GF, do you think this recipe would work using GF flour?
Please do not put the amounts suggested here. Too much sugar, and way too much coconut oil. Other wise… great cake, great taste and you can play with the spices a bit (for example ginger and cardamom) I also used more apples since i like it specially appleish, thanks
