Quick and Easy Corn Casserole

We have been enjoying a lot of yellow vegetable dishes around here lately! From Squash Casserole and Pan Roasted Corn to this wonderful Corn Casserole recipe. I’ve eaten a similar dish before, but this recipe (which I found in a church cookbook) is a keeper!  It is quick and easy, not to mention absolutely delicious!

Quick and Easy Corn Casserole

  • 1 (16 oz) can whole kernel corn, drained
  • 1 (16 oz) can cream style corn
  • 1 (8 oz) pkg. sour cream
  • 1 egg, beaten
  • 1/4 cup butter, softened
  • 1 box Jiffy cornbread mix

Combine corn, sour cream, egg, butter and cornbread mix.  Put in lightly greased 9×13 baking dish.  Bake at 350 for 45 minutes.

See?  I told you it was easy!

My sister makes this exact same recipe (she calls it “Baked Corn”) and we all *love* it. It’s the dish she brings now to all of our family get-togethers. Yum!

Okay, it’s official, this is truly a wonderful recipe! Even better tasting than I had hoped for. 1 change, I din’t have any sour cream, so I used plain Greek yogurt instead..Still it was absolutely terrific. I will definitely be making this again.
