Ultimate Mexican Lasagna Recipe
Hey, hey! I’m excited to share the most delicious lasagna recipe ev-ah today! I love changing recipes up to fit with the ingredients we have on hand. I’m more adventurous when I’m cooking rather than baking, but recipes that are easy to modify are my favorites. This ultimate Mexican Lasagna recipe is a fancied up spin-off of my original recipe that I just know you and your family will love!
Ultimate Mexican Lasagna Recipe
- 1 lb. ground beef
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 cup refried beans
- 1 – 15 ounce can black beans
- 2 -3 Tablespoons homemade taco seasoning
- 1 – 10 ounce package frozen corn
- 2 cups salsa
- 1 – 24 ounce cottage cheese
- 3+ cups shredded cheddar cheese
- 10 corn tortillas
Preheat oven to 350 degrees. Brown ground beef with onion and garlic. Drain. Add refried beans, black beans, taco seasoning, corn and salsa to meat mixture and heat through. Add a little (1/4 cup?) water at this point, if necessary.
Line 13 x 9 baking dish with 5 corn tortillas {tear two in half}. Spread half of meat/bean mixture over tortillas. Evenly distribute half of cottage cheese over meat. Then add cheddar cheese. Repeat.
Bake for 30-45 minutes or until bubbly and cheese is melted.
Serve with shredded lettuce, chopped tomatoes and sour cream. Enjoy!

This was a hit out of the park!!! This recipe will now be on my recipe rotation and a definite pull when we have company. I didn’t have enough Salsa so I used a can of Rotel and it was yum!
