Mexican Lasagna
At our house, we love all things Mexican — Fajitas, Chimichangas and Quesadillas to name a few. When I was still in high school, my (now) 94-year old Memaw asked me to help her make a Mexican Lasagna. We love this dish! I made two casseroles back on Freezer Cooking Day. I put one in the freezer, and it turned out perfectly!!
I’m not great at following recipes for dishes like this, but I’m going to do my best to tell you how. Just know that you can make it however you want!
Mexican Lasagna
- 1 lb. ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can refried beans (I used a black/pinto bean mixture that I made in the crockpot.)
- 2 Tablespoons homemade taco seasoning
- 1 1/2 cups salsa
- 1 large (24 oz) carton cottage cheese
- Shredded Cheddar cheese (lots of it!)
- 8 corn tortillas
Preheat oven to 350 degrees. Brown ground beef with onion and garlic. Drain. Add beans, taco seasoning and 1 cup salsa to meat mixture and heat through. Add a little (1/4 cup?) water at this point, if necessary.
Line 13 x 9 baking dish with 4 corn tortillas {tear one in half}. Spread half of meat/bean mixture over tortillas. Evenly distribute half of cottage cheese over meat. Then add cheddar cheese. Repeat, but before adding last layer of cheese, sprinkle 1/2 cup of remaining salsa on cottage cheese. Then top with cheddar cheese. .
Bake for 30-45 minutes or until bubbly and cheese is melted.
Serve with taco toppings, a lettuce salad or roasted vegetables. Enjoy!
This looks great. My friend recently posted that she had made a Mexican lasagna and I really wanted a recipe to that. So, perfect.
This does look great!
Thanks for posting this! I really want to make it soon 🙂
My husband would LOVE this! When I make tacos, I usually make 2 pounds of meat (so we eat one, freeze the second for another meal) and this would be a great way to use it!
Thank you for sharing! 🙂
YUM! I love mexican lasagna or really any mexican food too!
This looks so perfect for today. Rainy muddiness.
I made something similar to this recipe before and my husband loved it! I would like to hear your beans in the crockpot method 🙂
Ooooo….I think I have to add this to my next meal plan, cooking spree. It looks delicious!
Thanks so much for posting. I was very curious when I saw it on your oamc post.
I want to try this but would like to know what you consider to be a large carton of cottage cheese? 16oz? They come in 3 sizes in my grocery store 🙂
My family would love this. Thanks for sharing. Doylene
Great recipe…that sounds like something my husband would LOVE! 🙂
We also love all things Mexican so I will have to try this. We are having an enchilada bake tonight. Yum.
Yep I will have to try this one!
Sounds and looks YUMMY!!! THANKS!!!

Mmm. I love Mexican food too.
This looks great. Thanks for mentioning that it’s a good freezer meal, too. I’m just getting started with that, so I’m on the lookout for ideas.

I first made Mexican Lasagne about 25 years ago. MY recipe was all the left over Taco Ingredients from the night before, layered of course with Tortillas. The only thing I left out was the lettuce. My daughter & her friend loved it. I think I’ll try it again soon. Thanks for bringing back great memories. Susan
Oooo…I was just planning my two week menu. This is definitely going on it. Have a wonderful autumn day!
Yumm! Definitely on my list of must make!
Myra,
This was SO good! Thank you for this 🙂
I would love to know how you make your refried beans.
I just want to say THANK YOU!. I saw this posted the other day and had to try it. It was delicious 🙂 Topped mine off with a little sour cream, green onions, and cilantro!
