Chinese Chicken Casserole
When my Mom told me that she was making Chinese Chicken Casserole for Sunday dinner, I almost swooned…or maybe I did. I’ve been wanting to share this recipe with y’all for a really long time, so I took my camera along for a photo. 🙂 Chinese Chicken Casserole is comfort food at it’s finest! Yum!!
Chinese Chicken Casserole
- 2 cups cooked chicken, cubed
- 1 cup diced celery
- 1/2 onion, chopped
- 1 cup cooked rice
- 3/4 cup mayonnaise {we like olive oil mayo}
- 1 can cream of chicken soup OR make your own which is much healthier
- 1 cup mushrooms, sliced
- 1 tsp. lemon juice
- 1 tsp. salt
- 4 oz. sliced water chestnuts, drained
- 1/2 cup sliced almonds
- 1/2 cup butter, melted
- 1 cup cornflakes
Preheat oven to 350 degrees. Lightly saute celery, onion and mushrooms. Mix all ingredients together in a large bowl except almonds, butter and cornflakes.
Place mixture into a 13×9 baking dish. Mix melted butter, almonds and cornflakes together and then sprinkle on top of the casserole. Bake for 35-40 minutes until bubbly and warmed through.
Enjoy with a lettuce salad, pan-roasted corn and delicious rolls!

Wow – this is a favorite casserole of ours only we call it Chicken Delight and it is yummy! I serve it with salad, crescent rolls and peas and carrots.

I’m curious…where does the Chinese in the name come from? The water chestnuts?
Good question. I really have no idea. 🙂 The water chestnuts is a possibility. You could probably use chow mein noodles in place of the corn flakes as well.
