Texas Black Bean Soup
My family loves soup for dinner as the days get shorter and the air turns cooler. I’m always looking to expand my soup repertoire which already includes slow cooker baked potato soup, broccoli cheddar soup and Italian vegetable soup. Recently, I found a recipe for Texas Black Bean Soup in my recipe card box that I put together back in high school. With a bit of tweaking, I made it ours and it’s so, so yummy!

My Texas Black Bean Soup is made in a slow cooker, so it’s perfect for dumping everything in in the morning and then forgetting about it all day…just how I like it! 🙂
Texas Black Bean Soup
- 2 cans (15 oz) black beans, rinsed and drained
- 2 cans (14.5 oz) diced tomatoes with green chilies {I prefer mild}
- 1 can (15 oz) roasted tomatoes OR roast your own like I did yesterday! 🙂
- 4 cups liquid {I use a combination of chicken broth and water}
- 1 (12 oz) package frozen corn
- 1 (4.5 oz) can chopped green chilies {If you don’t like spicy food, leave these out}
- 5 green onions, chopped {I snip mine with scissors}
- 2 T. chili powder {more or less depending on your taste}
- 1 t. ground cumin
- 3 cloves garlic, minced
- 1 1/2 t. salt {added toward the end of cooking time}
- sour cream, cheese, cilantro, to garnish if desired
Dump everything in except for the salt and the garnishes. Put the lid on securely and cook on high for 4-5 hours or on low for 8-9 hours. Toward the end of cooking time or right before you serve it, add 1 tsp. of salt to taste.
I made knock-off Red Lobster cheesy garlic biscuits to serve with our bean soup! Yummo!

That sure does look delicious. I think my husband would like it along with at least half of the children 😉 I love broccoli cheese soup, but I haven’t found that perfect homemade version yet.

This sounds so good. I will make this Sat for the family, I may add some ground beef. My 16yo grandson does not think anything veggie is good, but you add ground beef and it all good. Our family favorite soup is my cheddar cheese soup, this is the only one the grandson never asks for meat. It is easy and so yummy.
I made this soup tonight! I saw it this morning and just had to have it. However, I made a couple variations to it. I added chicken..much like my homemade chicken tortilla soup. Then, top it off when sour cream and crushed tortilla chips!! YUMMY!!!!!
