Easy Mexican Chicken And Rice Bowls
Good morning, lovelies! Several weeks ago, I instagrammed a photo of the Easy Mexican Chicken & Rice bowls I made for dinner. {This is not an unusual occurrence, but everyone wanted the recipe.} I made it again measuring everything as I went along, so I could share this delicious and easy recipe with you! It is drool-worthy.

Easy Mexican Chicken And Rice Bowls
Rice:
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cups Basmati or Jasmine rice {or whatever you have on hand}
- 1/2 teaspoon garlic powder
- 1 can Rotel
- 1 14.5 ounce can diced tomatoes
- 2 cups chicken broth
- 1 teaspoon Real Salt
- 1 teaspoon cumin
Chicken:
- 2-3 chicken breasts, cut into chunks
- 2 tablespoons butter
- 1-2 tablespoons homemade taco seasoning
Heat butter over medium heat in a large skillet. Add chopped onions and saute. Reduce heat to low. Add rice and garlic garlic powder. Lightly brown rice while stirring constantly. This takes about 3-4 minutes. Add Rotel and canned tomatoes. Stir well. Add broth, cumin and salt. Bring to a boil and reduce heat to low, cover and simmer for 10 to 15 minutes or until rice is done.
While rice is cooking, heat butter in another skillet. Sprinkle taco seasoning over chicken chunks and add to skillet. Brown chicken on all sides using tongs to turn. Reduce heat, cover and allow chicken to cook in it’s own juices. If needed, add a small amount of water {1/4 cup}. It takes 10-15 minutes for the chicken to cook through. {I just turn the chicken every few minutes so it gets a lovely golden brown color on all sides.}
When rice and chicken are done, add chicken to rice mixture and combine gently.
Serve in bowls topped with sour cream, shredded cheese, pan roasted corn, black beans, cilantro and salsa, if desired.

Hey Courtney! I made the recipe and then put it in my crockpot on keep warm and it worked perfectly. I also added some black beans and corn to the crockpot and stirred it up. I served it with sour cream and cilantro on the side. 🙂
I made this for my family tonight using leftover shredded chicken that I had when I made my own chicken broth, and it was a hit. This will go on our menu at my house for sure. Thanks so much for sharing this with everyone Myra!
