Chocolate-Cranberry Energy Bites
Hey y’all! I’m really excited to share this delicious and healthy recipe for Chocolate-Cranberry Energy Bites that I made for Valentine’s Day {in lieu of junk}. Ha! I’m working on losing the baby weight, so these energy bites are a perfect snack right after a workout or as a mid-afternoon pick-me-up.
YUMMM…
Chocolate – Cranberry Energy Bites
- 2/3 cup natural peanut butter
- 1/2 cup organic raw honey
- 1 1/2 teaspoon vanilla
- 1 cup rolled oats {I use these.}
- 1 cup unsweetened coconut flakes
- 1/4 cup cocoa powder
- 1/2 cup finely chopped walnuts {or pecans}
- 1/2 cup dried cranberries
- 1/2 cup mini chocolate chips {these are our favorites}
Mix peanut butter, honey and vanilla in a medium bowl. Add remaining ingredients and mix together until evenly combined. Using your hands works wonders. 😉 Refrigerate for 30 minutes.
Press and form mixture into 1-2 inch balls. There will probably be some little bits left in the bottom of the bowl. Just scoop those out for yourself. 😉
Store in an airtight container in the fridge for up to a week.
This recipe makes approximately one dozen 2″ balls and two dozen 1″ balls. I calculated the 1″ balls to be right about 100 calories each.

OK…leave it to me to already have a question! I am out of coconut and I only have full size chocolate chips…would they work without the coconut and should I maybe just chop the chips!? 😉

You will find unsweetened coconut in the frozen section at any grocery store–including Walmart! Mine is usually near the frozen berry section.

I wonder if you could use chocolate protein powder instead of cocoa powder. . .
