Chicken Enchilada {Easy Casserole}

Good morning, y’all! I write this post from my bed in our new house. The boys are still sleeping for which I’m so grateful. Every muscle in my body is sore from moving in the last two days. I’m immensely grateful for “my people” {family and friends} who tirelessly helped us pack and move. I think I’m grieving in a way because I loved parts of our 120-year old home. Our landlord needed to move in, so we had to move out. But, all is well and our new house is much more suited for our family. {Photos to come.}

Back to this delicious recipe! I’ve been craving Chicken Enchiladas lately, but I wanted to create a quick recipe. A casserole that would be easier to make than rolling up a bunch of filled tortillas. So I created this Chicken Enchilada Casserole with some counsel from my sweet sister who is an amazing cook. It was a hit with my family, so I count that great success!

So thankful you’re all moved in. We love love chicken enchilades in our home, but sometimes I am just not in the mood to make them. I am going to definately try this recipe out.

I can’t wait to try these, I’d do it right now, if only I had chicken in the pantry. Have you ever substituted casserole for the shortening in the recipe? I never seem to keep shortening on hand anymore. It spoils before I ever use it.

I tried this casserole last week for dinner and I had to come back and tell you how delicious it is! My husband, who never really gets excited about food, couldn’t stop raving about it….and we fought over the leftovers all weekend :)
