Chicken Enchilada {Easy Casserole}
Good morning, y’all! I write this post from my bed in our new house. The boys are still sleeping for which I’m so grateful. Every muscle in my body is sore from moving in the last two days. I’m immensely grateful for “my people” {family and friends} who tirelessly helped us pack and move. I think I’m grieving in a way because I loved parts of our 120-year old home. Our landlord needed to move in, so we had to move out. But, all is well and our new house is much more suited for our family. {Photos to come.}
Back to this delicious recipe! I’ve been craving Chicken Enchiladas lately, but I wanted to create a quick recipe. A casserole that would be easier to make than rolling up a bunch of filled tortillas. So I created this Chicken Enchilada Casserole with some counsel from my sweet sister who is an amazing cook. It was a hit with my family, so I count that great success!
Chicken Enchilada {Easy Casserole}
- 2 cups enchilada sauce {I make mine homemade}
- 2 Tablespoons butter or coconut oil
- 1 onion, chopped
- 1/2 green bell pepper, diced
- 1 garlic clove, minced
- 2 cups chopped cooked chicken {I had left over slow cooker chicken.}
- 1 15 oz can black beans
- 8 oz cream cheese, softened
- 10 oz frozen corn
- 3/4 cup salsa
- 1 batch homemade taco seasoning
- 12 corn tortillas
- 1/4 cup sour cream
- 2 cups shredded cheddar cheese
Preheat oven to 350 degrees.
In a large saucepan, saute onion, bell pepper and garlic in 2 Tablespoons of butter or coconut oil. When onion is transparent, remove pan from heat. Add chicken, black beans, cream cheese, frozen corn, salsa and taco seasoning and stir. You may need to put the saucepan back over low heat to melt the cream cheese completely.
Line the bottom of an oiled 13 x 9 baking dish with six corn tortillas. Pour 1 cup of enchilada sauce over tortillas. Then spread half of the chicken mixture over the enchilada sauce. Dollop sour cream over chicken mixture and spread it around. Sprinkle 1/2 cup of cheese over that layer. Repeat layers with tortillas, remaining enchilada sauce, remaining chicken mixture and 1 1/2 cup cheese.
Bake for 30 minutes or until casserole is bubbly. Serve with a salad or taco toppings {lettuce, tomato, avocado, cilantro, olives etc}
