Tomato, Basil & Feta Salad
One of my favorite things about Summer is fresh garden produce that is so readily available. Our tomato plants are producing out the wazoo, so we are eating a lot of lettuce salads, tomato, onion, avocado salads and definitely…tomato and cheese sandwiches on homemade bread. Yum! To keep our taste buds out of a rut, I made this delicious tomato basil salad. The Italian vibe is fabulous!
The ingredients are a perfectly delicious combination. In my opinion, this tomato basil salad is best served immediately when the veggies are crunchy. However, as the flavors marinate together, it gets more and more flavorful.
Tomato, Basil & Feta Salad
- 4 cups chopped tomatoes
- 4 cups chopped cucumbers {I peeled three and left three with peeling on.}
- 5-6 green onions, chopped {I used kitchen shears to snip them up.}
- 1/2 cup chopped fresh basil
- 1/3 cup olive oil
- 3 Tablespoons balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/3 – 1/2 cup feta cheese, to taste
Toss vegetables together. Mix olive oil, vinegar, salt and garlic powder then pour over vegetables. Toss gently. Add feta cheese on top. Toss again just before serving.
Now I’m craving the leftovers!!

That looks amazing! When I lived in Turkey, one of my favorite things to eat was tomato, cucumber, and onion salad with olive oil and lemon juice. So light and refreshing, as I imagine this is also. Now I’m anxious to try it with the basil and vinegar.
