  2. They look yummi. You can try the following. Prepare everything, spread the mixture on the bread. Cut the cucumbers and put them in a collander, so any liquid can drop off. Just before serving put the slices on the sandwiches. It gives you a bit more time before they start to get soggy.

  8. I made these sandwiches for my son’s graduation open house a few years ago and just last week for his wedding reception.

    I use pretty much the same recipe but I soak the sliced cucumbers in a mixture of rice vinegar and just a little sugar for about 20 or 30 minutes before assembling the sandwiches.

    I found it adds just another layer of flavor that is quite yummy.
