Hey, hey! Thank you SO much for your sweet comments on my letter to my three year old yesterday. Y’all are just amazing! Today, I’m sharing a fabulous recipe – Chocolate Chip Tea Cakes. This part shortbread – part cookie recipe is quickly becoming a favorite at our house. I know y’all will love them too!
Chocolate Chip Tea Cakes
- 1 cup butter, softened
- 2/3 cup powdered sugar
- 2 teaspoons vanilla
- 2 cups flour {I use white spelt.}
- 10 ounces mini chocolate chips {These are our favorites.}
- 1/2 cup finely chopped walnuts
Preheat oven to 350 degrees. Cream butter and sugar; add vanilla and mix. Add flour and mix until doughy. Stir in chocolate chips and nuts. Roll into teaspoon-sized balls and place on an ungreased cookie sheet about one inch apart.
Bake 10-15 minutes until slightly browned and set. Cool 2 minutes on the cookie sheet and remove to a cooling rack. Sprinkle with powdered sugar.
Variation: I’ve also made these with 1 1/2 cups finely chopped nuts and without the chocolate chips. They are almost identical in flavor to pecan sandies. Yum!
What is your favorite kind of easy cookie to make?

Good Morning – I have been making these for years, without the nuts. I call them Chocolate Chip Shortbread. I also make Pecan Sandies. I also sometimes substitute Ground Almonds for the pecans. We love them all. My next one to try is Toffee Shortbread with Sea Salt … ♥
