Easy Jalapeño Poppers | With Sausage & Bacon
Happy Monday! I hope y’all had a fabulous weekend! I’m in Salt Lake City this week at the Young Living convention. I’m prepared to have my socks blown off because usually there are 4,000 at this convention every year. This year there are 9,000! Anyway, that’s where I am, so if you follow me on Facebook, Twitter and Instagram, you will probably get a glimpse into that. 🙂
On to today’s post…I was inspired to create this recipe by my friend Emily’s grandma. When Emily was visiting, we stopped to pick her grandma up and she had just pulled some delicious jalapeno poppers out of the oven. They were SO yummy! I needed to make something for Sunday night after church, so I made poppers with extra bacon wrapped around them. The entire pan of jalapeno poppers was devoured.

Easy Jalapeno Poppers
- 15-20 jalapeno peppers {my jalapenos were pretty big}
- 1 pound mild sausage
- 12 ounces cream cheese, softened {I used 1 1/2 blocks}
- 1/2 cup shredded mexican blend cheese
- 1 pound sliced bacon {slices cut in half}
Split peppers. De-vein and de-seed.
In a medium bowl, place cream cheese and shredded cheese. Brown sausage, drain well.
Pour sausage over cheeses to melt them. Mix with your hands {it’s easier than with a spoon.}.
Stuff jalapenos with the cheese and sausage mixture being careful not to overfill. Wrap with slices of bacon.
Bake at 375 for 35-40 minutes until browned and bacon is done.
Remove to paper towels to drain and cool just a bit. Serve.

*Note: Because of the variables of the size and number of peppers, you may want to add 2 blocks of cream cheese rather than just 1 1/2. You can also use any leftover filling as a warm dip with tortilla chips. 🙂
