Chocolate Peanut Butter Baked Oatmeal
Happy Monday! I hope you each had a wonderful weekend. I did. We had our annual ladies’ brunch. It was a lot of work, but the payoff is always SO big with blessings. 🙂
I’m so excited to share my Chocolate Peanut Butter Baked Oatmeal today! My boys love baked oatmeal for breakfast, so I kicked it up a notch this past week with the addition of chocolate chips and peanut butter. It’s a special and delicious treat! YUM!
You can make it up the night before and just pop it in the oven in the morning. Super easy!

I try to use organic ingredients as much as possible. I purchase many of the ingredients in this recipe in bulk from our local food co-op. I love ordering in bulk.
Chocolate Peanut Butter Baked Oatmeal
- 3 cups rolled oats
- 1/2 teaspoon real salt
- 2 teaspoons baking powder
- 1 tablespoon ground cinnamon
- 1/2 cup raw sugar
- 1/3 cup mini chocolate chips {We love these soy free, dairy free, gluten free chocolate chips.}
- 1/2 cup applesauce
- 2 eggs, beaten
- 1 cup milk {cow milk or coconut milk or almond milk}
- 1/2 cup crunchy peanut butter
Combine oats, salt, baking powder, cinnamon, sugar and chocolate chips in a bowl. Add eggs and applesauce and stir well. Pour in milk and stir until combined. Fold in peanut butter.
Bake in a greased 8×8 baking dish at 375° for 30 minutes until lightly browned.
Serve like a cake with a dab of butter on top. Or crumble in a bowl with milk.
