Cranberry Orange Muffins
Are you in the mood to drool? My mom made these delicious Cranberry Orange Muffins a few weeks ago. I brought the recipe home, altered it a bit and made it yesterday. Yummo!
The tartness of the cranberries along with the citrus flavors of orange zest, orange juice and lemon extract is just fabulous! I made an optional orange glaze to dip the muffins in.
Cranberry Orange Muffins
- 1 cup butter, softened
- 3/4 cup raw sugar
- 2 eggs
- 1 teaspoon baking soda
- 3/4 cup milk
- 3 cups all-purpose flour
- 1 Tablespoon grated orange rind
- 1/4 c. orange juice
- 1 teaspoon lemon extract
- 1 cup craisins
Cream butter and gradually add 3/4 cup sugar beating at medium speed until fluffy. Add eggs, one at a time, beating after each.
Combine baking soda, buttermilk, stir well. Add to creamed mixture alternating with flour.
Stir in orange rind, 1/4 cup orange juice, lemon extract, and craisins.
Fill greased muffin tins 3/4 full. Bake at 400″ for 10-12 minutes.
Orange glaze:
- 1/2 cup confectioner’s sugar
- 1/8 cup orange juice
Place sugar in a bowl and gradually {slowly} add orange juice until the glaze is the consistency you want. I used a whisk to remove all the sugar lumps.
Dip muffin tops into glaze and place on cooling rack.

I love cranberry orange muffins! They are my favorite kind of muffin. Just to clarify something. The recipe says just milk but the instructions says add buttermilk. ? Hope this is helpful, that’s all I want for you. : )

the recipe looked good; but when I tried it, the muffins were terrible. all I could taste was the “1 t. baking soda,” which I think was a typo! maybe you meant teaspoon? it just seems like (and tasted like) an awful lot for a recipe.
I’m so sorry Julia. I grew up with t. meaning teaspoon and T meaning Tablespoon. When I type of my recipes (especially lately), I’ve been trying to remember to type out the entire word because it’s confusing for some folks. So yes, the little t should have been a teaspoon. I can’t imagine how they would taste with a Tablespoon of baking soda!
I REALLY hope I can make these this weekend. Mouth-watering
