Mint Chocolate Brownies
This recipe for Mint Chocolate Brownies isn’t health food – trust me. But it’s a family tradition for this time of year, so I just had to make them and share the recipe with you. 🙂 I cringed when I realized how much sugar is in them. Yikes, but once a year isn’t a bad deal. Besides, when you take them to a friend’s house or give most of them away, it’s really okay.
Mint Chocolate Brownies
- 4 (1 oz) squares unsweetened chocolate
- 1 cup butter
- 4 eggs
- 2 cups sugar
- 1 c. all-purpose flour {I used spelt flour}
- 1/2 tsp. sea salt
- 1 tsp. vanilla
- 4 cups powdered sugar, sifted
- 1/2 cup butter, softened
- 1/4 cup half and half
- 1/4 cup green creme de menthe {this is a syrup type liqueur} or use peppermint flavoring to taste
- 1 cup, finely chopped nuts
Chocolate Drizzle – 1/2 cup chocolate chips, melted
Brownie: Combine unsweetened chocolate and butter in a small saucepan; melt over low heat stirring with a spoon or whisk until completely melted. Let this mixture stand for 10 minutes. In a mixing bowl, beat eggs until thick and lemon colored. Gradually add sugar, beating well after each addition. Add flour, salt, vanilla and chocolate mixture. Beat on low just until combined.
Spoon mixture into a greased and floured 13″x9″ baking dish. Bake at 350 for 30 minutes or until a toothpick comes out clean. Cool for 10 minutes then spread frosting on.
Mint Frosting: Combine all ingredients except nuts. Beat on high until smooth. Stir in nuts.
Spread frosting over brownie and chill for several hours. Cut into bars {very small bars} and drizzle melted chocolate over each piece. I used a baggie and cut a teeny hole in one corner. Chill another hour to set the drizzled chocolate. Keep refrigerated in an airtight container.

Those look SO yummy! Love a good chocolatey brownie. As for the sugar, I’m sure you could cut it back to 1 1/2 c. without noticing any difference in taste or texture. I almost always cut sugar back by 1/4-1/2 c. in recipes and have not noticed any difference. And I even love sweets! 🙂

Made these tonight for our church Christmas program. They were awesome! I do have to say I was a little lazy. I used a box for the brownies and then used the mint frosting. I will definitely be keeping this recipe. Thank you. Have a very blessed Christmas.
