Favorite Lemon Recipes

I’ve mentioned before about how much I’m loving citrus colors for decorating this Spring. I try to keep a bowl full of lemons on my kitchen table because they are bright and cheery, and I love starting my day with fresh lemon water – yes, I’m weird, I know. 🙂

Maybe I need extra Vitamin C these days because all I can think about are lemons, limes and oranges. Do I have a citrus fettish or something?? Haha!

Anyway, I thought I would share a few awesome lemon recipes and then together we’ll work on a fun lemon recipe roundup. Woot!

  1. In the last week I have made 4 batches of Lemon squares. I am known for them and and everyone usually always asks for them at holidays and when there are family gatherings.
Also lemons are very good in helping those that have and had kidney stones. The citrate helps in preventing them.

  2. Lemon Meringue Pie – My mother oftens fixes this for my birthday!
1 crumb or 8″ baked pastry shell
1/2 c lemon juice (less for less tart)
1 t grated lemon rind (optional)
    1 can condensed milk
    2 eggs separated
    1/4 t cream of tartar
    4 T. sugar

Combine lemon juice, rind, and condensed milk. Add egg yolks and stir until well blended. Pour into chilled crumb crust or cooled pastry shell. Add cream of tartar to egg whites. Beat until almost stiff enough to hold a peak. Add sugar gradually, beating until stiff. Pile lightly on top of pie filling spreading out to touch the crust. Bake at 325 until lightly brown, about 15 minutes. Cool.

  3. I would like a good recipe for Homemade Lemonade using Splenda or Stevia. I think I am going to start with this one and instead of making simple syrup substitute splenda.
