Stuffed BBQ Potatoes – Kid-Friendly Version!

If you live in the South, you know what a stuffed BBQ potato is. Yep. If you don’t, well you’re just missing out and you definitely need to make this recipe!  Ha!

We (speaking of Southerners) all love going down to the closest BBQ restaurant and ordering a stuffed potato. My favorite is stuffed turkey potato. Yum! Around these parts our BBQ is made with a vinegar white sauce rather than a tomato based sauce. Anyway, it’s pretty much amazing.

My Mom created a quick and easy way to make “stuffed potatoes” at home for a fraction of the cost of restaurant potatoes – usually between $6-$7!  Not to mention that they are SO much easier to eat! My sister and I have carried on this tradition in our homes!

Stuffed BBQ Potatoes

  • 5 lbs Russet Potatoes, cubed, cooked
  • Pulled BBQ (turkey, pork or beef)
  • Sour Cream, Butter
  • Salt and Pepper
  • Medium onion, chopped
  • Shredded Cheddar Cheese
  • Real Bacon Bits
  • Parsley
  • BBQ Sauce – My Hubs loves Sweet Baby Rays!

Coarsely mash potatoes, leave plain.  Serve with pulled BBQ and toppings.  Each person gets to build their own “stuffed BBQ potato” on their own plate.  Enjoy!

Note: 5 lbs potatoes will comfortably serve 6-8 people. I usually serve stuffed potatoes with baby carrots or a lettuce salad.

  1. OMG there is nothing like a bbq potato. Sweet Baby Rays is also good!! I love these things so much I guess I never really thought about it being a Southern thing but I should have. We do love some fattening food. Now I am wanting some of this really bad.

  5. Oh what a great idea! And this way you don’t have to wait for the potatoes to bake in the oven! Oh, I am sooo going to try this. I have 10 lbs of potatoes in the basement just waiting for me to use them up.

    1. Hey Marci! I don’t have a recipe for pulled bbq. We have a fabulous bbq restaurant (local chain) where we always get the bbq turkey or pork. I wish I could help more!
