Avocado, Onion & Tomato Salad

I could eat this salad all day every day.  It’s healthy, tasty and very Spring-like.  Isn’t everyone ready for Spring?  I’m over the cold, gray days.  I’m so ready for sunshine, picnics, bike rides and play time at the park!

Avocado, Onion and Tomato Salad

  • 2 Avocados
  • 2 Roma Tomatoes
  • 1/2 large Sweet Onion
  • 1/2 cup (more or less) Balsamic Vinaigrette or Italian Dressing
  • 1 T.  Olive Oil
  • Freshly Ground Salt and Pepper to taste

Slice avocados, tomatoes and sweet onion.  Combine in a bowl.  Drizzle with vinaigrette or dressing and olive oil.  Sprinkle with salt and pepper and toss gently.

Enjoy immediately!

Note: For an extra punch of flavor marinade in the refrigerator for a few hours.

Ooo…that looks so yummy!! It really does look so springy. We tried your pizza recipe tonight and oh my, was it so good! It was my first time using yeast and I was a little nervous – but it was the EASIEST recipe to follow. Even my husband remarked how great it was. It’s a definate keeper!

How cool! I make this exact recipe except that I add fresh cilantro, chop everything smaller, and call it avocado guacamole. :) It is definitely very “springy.”

Oh wow!! This looks like something my husband would LOVE. And someone just told me that I should be giving the baby more avocado so I might just make that for lunch sometime for them.
