Easy Roasted Broccoli
Good morning, lovelies! I’m so excited to share one of my favorite ways to eat veggies. Even if you hate vegetables {oh my! who wouldn’t love veggies?}, this is the way to fix ’em so you can get them down. Roasted broccoli is crispy and sweet. I know that sounds weird, but it’s true. I could eat it like candy!
YUM!!

Easy Roasted Broccoli
- Fresh broccoli {you can do grape tomatoes, onions, zucchini, squash etc}
- Extra virgin olive oil
- Real salt
- Garlic powder
- Herbamare seasoning {This stuff rocks!}
Preheat oven to 400 degrees. Place broccoli or other veggies on a baking sheet. I LOVE my Pampered Chef bar pan stone for roasting.
Drizzle with olive oil. {I often use my EVOO cooking spray because it’s quick and easy.}
Sprinkle with seasonings.
Roast for 15 minutes or until tender crisp.
Enjoy!
You’ll be shocked at how delicious this is! 🙂
So, tell me…are you a broccoli lover or a broccoli hater?

We are “broccoli lovers” in our family – even both of my boys! However, I’ve never roasted it….we like it steamed. Thanks for the recipe – I’ve roasted other vegetables and would like to try this, as well.
Blessings,
Lanita
YUM! Our family loves it and I’ve been using Avocado oil in place of olive oil – it is really yummy too!!!

I can tolerate broccoli. I like it best raw. When I roast it, though, it becomes bitter. And mostly inedible for me. I would really like to get to the place of loving it (thus eating more). Is it, perhaps, a tastebud thing?
Any hints to keep it from being bitter?

I’m a broccoli lover, and I totally agree that roasting is the BEST way to cook broccoli. I find that most veggies taste better roasted…especially cauliflower and brussels sprouts!!

If you cook the broccoli for a couple minutes in a pan with 1/4 cup water, salt, and chili flakes….then drain before roasting….Damn! Good shit. I also love to sprinkle with just a bit of aged balsamic and top with patm shavings to eat atop creamy pasta dishes. Super Legit 🙂
