No Bake Cookies | Chocolate Cranberry Almond
Hey, hey! Are y’all having a good week? Last week my husband was out of town and Cameron was under the weather, so we were stuck at home for a few days in a row. Being cooped up and lacking good sleep was almost enough to make me lose my mind. So, one day {to give my sweet tooth a smile} I used my basic No Bake Peanut Butter Cookies recipe and whipped up an oomphed-up version with cocoa powder, almond butter and dried cranberries.

No Bake Cookies | Cranberry Chocolate Almond
- 4 cups quick oats
- 2 generous tablespoons cocoa powder
- 5 tablespoons creamy almond butter {peanut butter also works}
- 2 cups raw sugar {white is fine}
- 1/2 cup butter
- 1/2 cup coconut milk {or regular milk}
- 2 teaspoons vanilla
- 1/2 cup dried cranberries
Measure out oats, cocoa powder and peanut butter in a large bowl. Heat together sugar, butter and milk, boiling for 1 minute. {This step is much like fudge making.} Pour while hot over oats and peanut butter. Add vanilla and nuts. Mix quickly.
Drop by spoonfuls on a cookie sheet. As the mixture cools, you may need to use your hands to make it stick together…this is completely normal! Put the cookie sheet in the freezer if you want to speed up the cooling process. Makes 3 dozen.
