Chicken Salad With Cucumbers
Happy Wednesday, my sweet friends! I hope you’re having a fabulous week! I’m really excited to share my delicious chicken salad recipe with y’all today. This is a wonderful, chunky chicken salad that has a perfect balance of sweet and salty, smooth and crunchy flavors. Yummo!
We’ve been enjoying fresh cucumbers from the gardens of friends and local farmers. Cucumbers are an amazing Summery addition to a chicken salad.

Chicken Salad | Cucumber Chicken Salad
- 2 cups chopped cooked chicken {Slow cooked chicken breasts are MUCH more tasty and tender than boiled.}
- 1/2 cup cashews
- 1/2 cup dried cranberries
- 1 cup chunked cucumbers
- 1/2 teaspoon Real Salt {more or less to taste}
- 1/2-3/4 cup mayonnaise
Mix all ingredients in a bowl until everything is well coated with the mayo. Chill & serve.
Enjoy!
We love chicken salad on sandwiches, with crackers, in pita bread or rolled up in romaine leaves. It’s lip-lickin’ good!

Yum! I just made a unique chicken salad this week. It’s chicken, diced cucumbers, grapes, sliced almonds, GRATED parmesan cheese, and Kraft Creamy Poppyseed dressing. ‘Twas delish. I highly recommend it. 🙂
I made this for lunch today. Yum!! I used raisins because I didn’t have dried cranberries, and the cucumber I had was a white one. Served it on lettuce. Really, really delicious. Thanks for the recipe!

What is the serving size for this recipe?
Probably about 1/2 cup. 🙂
Tastes wonderful! I don’t like nuts so I left out the cashews. I did add a splash of lemon juice to add to tye summery flavor. I baked the chicken breasts with lemon pepper the day before.
