Strawberry-Peach Pancakes
We love eggs with cheese and nitrite/nitrate free bacon every morning. A few days a week, I make muffins, pancakes, french toast or something to go along with our normal fare. Last week, I added some ripening strawberries and peaches to my every day recipe to make Strawberry-Peach Pancakes. We enjoyed them so much!
Strawberry-Peach Pancakes
- 1 c. white spelt flour {or all purpose flour}
- Dash of sea salt
- 1 t. ground cinnamon
- 2 t. baking powder
- 1 egg
- 1 cup milk
- 2-3 strawberries, finely chopped
- 1/2 peach, finely chopped
Heat griddle and grease with butter. Mix dry ingredients. Beat egg, add milk and mix well with dry ingredients. Add strawberries and peaches and stir well. Spoon batter onto hot griddle. Flip the pancakes when bubbles pop and cook the other side.
Enjoy with honey, syrup, butter or jam.

Oh, those look so yummy. Perfect timing with strawberry season. It would be great to make a strawberry sauce to go on top!

oh this looks so yummy — i wish peaches were in season up here! I love syrup with my pancakes but with these i don’t think i’d need any topping :).
I think pancakes are one of my favorite foods, I try not to eat them to often as I aways eat too many – but these are definitely tempting me……..
