10 Minute Lunch Quesadilla
I hope your week is off to a good start! Today, I’m sharing an incredibly easy quesadilla recipe. One day last week, I was short on time, so I threw together a quick lunch for my hubby. He said it was yummy and that it hit the spot. Since it got his stamp of approval, I decided to post the quesadilla recipe here.

Ahh, yes! It’s the perfect blend of crunchy, chewy and tangy. I really need to figure out how to make my own gluten-free flour tortillas, but this time I just used regular tortillas.
10 Minute Lunch Quesadilla
- 2 large flour tortillas
- 1 1/2 slices of sharp cheddar cheese, broken in pieces
- 2 slices of deli meat – turkey or ham {We prefer nitrite/nitrate free deli meats, but sometimes we purchase Boar’s Head.}
- Yellow mustard
- Butter
- Cooking spray
Preheat the oven to broil. Very lightly spray a baking sheet with cooking spray. I love using coconut oil spray.
Place one tortilla on the baking sheet. Squirt all over with mustard. Place meat and cheese on tortilla. Add the other tortilla on top.
Lightly butter the top tortilla.
Place the baking sheet in the oven for 3 minutes. Check to make sure the tortilla is browning to your liking. When that side is done, remove the pan, flip the quesadilla and brown for another 3 minutes or so on the other side.
Don’t go far because it doesn’t take long at all to melt the cheese and brown the tortillas.
Remove from oven, Cool for a minute and slice with a pizza cutter.
Enjoy with fresh veggies and fresh fruit!

We have a quesadilla maker that we normally use, but have also just used a skillet on the stovetop. Then I don’t have to heat up the oven, thus the house (live in south FL).
Try lightly coating one side of a tortilla with butter, the other side with peanut butter and place in pan. Slice banana and scatter over the PB tortilla. Place a 2nd tortilla lightly coated with PB on top (PB side down). Then spread a thin layer of butter over it. Brown lightly on both sides. OMWord! YUM!
You can also put honey in it, but my kiddo doesn’t care for it.

I never tried cooking quesdilla before. This recipe sounds easy. I’ll try it at home soon.

Have you tried the gluten-free tortillas (frozen) that Publix has? Maybe they wouldn’t tear up as badly as when I used them for enchiladas.

They aren’t always the prettiest tortillas around, but they are the tastiest tortillas we’ve ever had. I have no idea how the recipe would work with gluten free flour, but if you try it I’d love to hear how it went.
