Slow Cooker Sweet Potatoes
As far back as I can remember, Sweet Potato Casserole has been a staple at family gatherings around the holidays — particularly for Thanksgiving. A few days ago I was browsing through recipes on BettyCrocker.com and I found a recipe for Sweet Potatoes in the Crockpot! After I read through the ingredients, I was sold!
I made this recipe for our church dinner on Sunday. I didn’t get the potatoes in the slow cooker early enough, so they weren’t cooking fast enough to be done in time. I decided on Plan B and put them in a casserole dish in the oven where they finished just in time for dinner.
1 1/2 cups applesauce
2/3 cup brown sugar *see note
3 T. butter
1 t. cinnamon
1/2 cup chopped nuts, toasted

Place sweet potatoes in slow cooker. Mix remaining ingredients except nuts (I accidentally added the nuts and it was fine). Spoon over potatoes.
Cover and cook on low heat 6-8 hours or until potatoes are very tender.
Sprinkle with nuts. Enjoy!
*Note: I doubled this recipe, but I only did 1 cup brown sugar instead of 1 1/3.
This dish is a very easy sweet potato “casserole” in the slow cooker. I love that I can get it going and forget about it for the rest of the day. The applesauce gave it great flavor as well!

great recipe! I did it tonight and my husband loved it. I added some chicken into the crockpot as well and it absorbed some of the flavor!

yes, I put it in raw and let it cook for about 8 hours…the meat was soooo tender 🙂
