Easy Spinach-Sausage Scramble
Hey y’all! How’s your week going? Mine is absolutely insane as we prepare for my brother’s wedding this weekend. Ahhh! If I can keep myself together from getting too emotional, I will feel successful. *wink*
I recently created a delicious spinach sausage dish for breakfast. It is so easy and I could eat it every day. Ridley {4yo} also enjoys it…and he’s getting a lot of great nutrition in this dish. Win-win!
Yummo! Here’s how to make it for your breakfast…
Easy Spinach-Sausage Scramble
- 1 tablespoon coconut oil, olive oil or butter
- 1/4 yellow onion, chopped
- 1 link chicken sausage, sliced {or approximately 1/4 cup already cooked ground sausage}
- 1/2 cup frozen chopped spinach
- 2 eggs, beaten
- salt, black pepper, garlic powder to taste
Heat oil or butter in a saute pan. Add onion and sausage. Saute until onion begins to turn transparent. Add spinach to sausage and cook until heated through…and thawed. I like to add a sprinkle of salt, pepper and garlic powder at this point.
Pour in eggs {I usually add a bit more seasoning to the eggs.} and scramble into the spinach-sausage mixture. Cook until eggs are lightly scrambled, but not over cooked.

This looks great! I love chicken sausage, especially for breakfast. My son loves veggies for breakfast. He will often ask for scrambled eggs with peppers (green) and onions!
