Gluten Free Autumn Pancakes {Giveaway}

My sister has severe milk and gluten intolerance. And I mean severe. Like throat swelling shut and dying kind of severe. She has medicine that stops the swelling, but we have had some very scary moments. If she has a reaction, even when the swelling stops, her stomach hurts for hours.

Recently, when I was asked to review the new gluten-free Bisquick, I jumped on the opportunity because gluten-free cuisine is very close to my heart.  Awareness for gluten intolerance needs to grow. Most people just don’t get it.

On Saturday morning I made Gluten Free Autumn Pancakes with Bisquick Gluten Free and topped with maple syrup, walnuts and powdered sugar. Yum! Can I just say that I’m putting an electric griddle on my Christmas list? I’m the world’s worst skillet pancake maker. At least they tasted delicious! {Just ignore how burnt dark that bottom pancake is! Ha!}

Autumn Gluten Free Pancakes

  • 2 cups Gluten Free Bisquick mix
  • 1/3 cup canned pumpkin
  • 2 cups milk
  • 1/4 cup vegetable oil
  • 3 T. brown sugar
  • 1 1/2 t. pumpkin pie spice
  • 2 eggs
  • maple syrup
  • walnuts, chopped
  • powdered sugar

In a mixing bowl, stir Bisquick mix, pumpkin, milk, oil, brown sugar, pumpkin pie spice and eggs until well blended.  Pour about 1/4 cup batter on skillet (or griddle) for each pancake.

Cook until edges are dry and center is bubbly.  Flip and cook the other side until done.

Serve with maple syrup, chopped walnuts and powdered sugar. If you have kiddos, they would probably love to have chocolate chips on top!

  5. My son and I both just found out that we have Celiac Disease. It has been very difficult for us to make the switch to a completely Gluten Free lifestyle of eating. Not only finding things to substitute, but also because it is so much more expensive. When you have only a certain amount you budgeted for food, and then you have to switch to foods that cost 2 times or more what you are used to paying, it just does not add up. I have not seen any contests to win gluten free products. Thanks for running this one, and thank you Bisquik!! I have not seen this in any stores that I shop at.

  8. I think this is so awesome because when my first son was little, he had an allergy to wheat. It was HARD trying to find GOOD recipes to make gluten free food. Then when I finally came across an all purpose, gluten free flour, the package was quite small and the price quite high.
    It’s so nice to see a big name like Bisquick meeting a need like this. 🙂
    My son has since grown out of (though I like to consider it being healed of) this allergen. He is able to eat wheat/gluten without problems now.

  28. Pancakes are the ultimate in our house! We are considering going gluten free to see if it helps with my son’s ADHD symptoms and pancakes was one of the items that we would be modifying most often.
