Eat From The Pantry Plan – Week 4

Well, it’s almost the end of January and the end of the Eat From the Pantry Challenge.  I did stay under my normal budget, but I went over the goal budget that I set for myself this month.  Oh well. I’m not too disappointed about it because we’ve done some entertaining this month as well as Ridley’s birthday-both of which cost more $$.  I am excited though about spending less than normal!!

This coming weekend FishMama and Money Saving Mom are hosting Freezer Cooking Daze again!  I’m working on my “to-do” list!  There’s nothing like cooking tons of stuff all at once.  I love, love, love being able to find dinner in the freezer!!  If you would like to participate, be sure to check out the Facebook event page.

Here’s what we’re eating this week:

Breakfasts:

Lunches:

  • Leftovers
  • Salad
  • Cheese and Veggie Wraps

Dinners:

  • Homemade Pizza
  • Chicken Parmesan (I’m going to invent a recipe!)
  • Vegetable Soup (to use up stuff in the freezer, pantry and fridge.
  • Chicken Wings (from the freezer)

Sounds like you’re still doing good with the Pantry Challenge – that’s awesome!! We love Chicken Parm at our house & I have a yummy recipe (that most importantly requires very little ingredients!!) if you need help w/your invention:)

Super easy. Just brown a couple chicken breasts in light oil over the stove top. After fully cooked, place on a baking pan & top each breast with 2 Tbs (or whatever) of Marinera Sauce. Then cover with Mozzarella Cheese. Broil in the oven on high for just a few minutes until cheese is browned & bubbly …. I like breaded Chicken Parm, but I make this one with low sod. marinara & low fat mozzarella so it’s not that bad. Came from Joy’s FIT Club recipes.

Saving something is better than saving nothing. ;)
I haven’t spent all of my budgeted money yet, but I am pretty sure it is going to be gone by Tuesday. Our local Brookshires grocery stores are going out of business and everything will be marked down to 50% + they are still taking coupons. Oh, my heavens! Totally worth blowing my budget a bit!

I went over the budget but didn’t spend as much as normal.We decided to continue this for Feb. and possible March.Used to do once a month cooking when the kids were teens ( in chruch activities, sports and working theirselves)and I worked 3 jobs and hubby worked 2. Now I cook once to make 2 dinners
