Easy, Peasy Carrot Cake

Last week, my mom asked me to make a dessert for Sunday dinner. I had a lot of extra carrots left over from my freezer cooking days (because I way over-bought), so I decided to make this carrot cake.

I was a little frightened at making a cake from scratch, but this cake turned out simply delicious and delectably moist! And it was super easy to make – I need all the help I can get! Ha!

Carrot Cake
  • 2 cups all-purpose flour (sifted)
  • 2 cups sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking power
  • 1 tsp. salt
  • 1 ½ tsp. baking soda
  • 1 ½ cups oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 ½ to 2 cups chopped pecans
  • 12 oz. crushed pineapple, drained

Preheat oven to 350º.

Sift together all dry ingredients. Add oil and eggs. Mix well. Add carrots, pineapple and nuts.Pour ingredients into a 9 x 13 pan or 2 round 8 inch cake pans. Bake for 50 minutes. Check and add 10 more minutes if necessary.

Cool completely. Frost with cream cheese icing below:

Cream Cheese Frosting:
  • 1/4 cup butter, softened
  • 3 oz cream cheese, softened
  • 1 Tbsp milk
  • 1 tsp vanilla
  • 2 cups powdered sugar

Cream all ingredients together.

Note: If you use 2 round cake pans and stack the layers, you definitely want to double the frosting recipe, so you’ll have enough for the sides and in between the layers.

I love carrot cake with pineapple! In fact, that's what we had for our wedding cake. :o ) I haven't actually tried adding pineapple when I've made carrot cake. I'll have to try it next time. Thanks for sharing!
