Last week, my mom asked me to make a dessert for Sunday dinner. I had a lot of extra carrots left over from my freezer cooking days (because I way over-bought), so I decided to make this carrot cake.
I was a little frightened at making a cake from scratch, but this cake turned out simply delicious and delectably moist! And it was super easy to make – I need all the help I can get! Ha!
- 2 cups all-purpose flour (sifted)
- 2 cups sugar
- 2 tsp. cinnamon
- 2 tsp. baking power
- 1 tsp. salt
- 1 ½ tsp. baking soda
- 1 ½ cups oil
- 4 eggs
- 3 cups grated carrots
- 1 ½ to 2 cups chopped pecans
- 12 oz. crushed pineapple, drained
Preheat oven to 350º.
Cool completely. Frost with cream cheese icing below:
- 1/4 cup butter, softened
- 3 oz cream cheese, softened
- 1 Tbsp milk
- 1 tsp vanilla
- 2 cups powdered sugar
Cream all ingredients together.
Note: If you use 2 round cake pans and stack the layers, you definitely want to double the frosting recipe, so you’ll have enough for the sides and in between the layers.
Enjoy!

I love carrot cake with pineapple! In fact, that's what we had for our wedding cake.
) I haven't actually tried adding pineapple when I've made carrot cake. I'll have to try it next time. Thanks for sharing!
