Coconut-Chocolate Bars

I’m always on the lookout for new “treat-like” recipes that I can make to share with family, friends and neighbors around the holidays. This is definitely a keeper that I will continue to make for the years to come. These bars are a wonderful combination of chocolate, caramel and coconut! Yum!

Coconut-Chocolate Bars
(taken from Betty Crocker Christmas Cookie book)
  • 1 1/2 cups butter, softened
  • 1 cup sugar
  • 1 t. vanilla
  • 2 cups all-purpose flour
  • 1 cup unsweetened baking cocoa
  • 2 cups flaked coconut
  • 1/2 cup caramel topping (I didn’t measure this…just guess!)
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 t. vegetable oil

Preheat oven to 350 degrees. In large bowl, beat butter, sugar and vanilla with electric mixer on medium speed until smooth. On low speed, beat in flour and cocoa until soft dough forms. (This takes longer than you might think). On low speed, beat in 1 cup of coconut. Press mixture into greased 13 x 9 baking dish.

Bake about 25 minutes or until center is set. Drizzle caramel over baked layer; sprinkle with remaining 1 cup coconut.

In a ziploc baggie, mix chocolate chips and oil; seal bag. Microwave on High 30-45 seconds, squeezing chocolate in bag every 15 seconds, until smooth. Cut 1/4 inch tip from corner of bag; drizzle chocolate over coconut. Cool completely. Yield: 32 bars

These look great, I am excited to make them this weekend but one question…is there really no eggs in these bars? Thanks for letting me know.

They really don't have any eggs. I double checked the cookbook to make sure for you! :)
