Easy, Healthy Breakfasts!
Today, in the middle of planning a coupon class, organizing a large interior design project, phone calls, e-mails, and taking care of Ridley, I managed to make a couple of breakfast foods that we love.
I made a double batch of my Mom’s Granola. It is SO yummy! Be sure to check out the recipe over on my sister’s recipe blog!
I also made 4 1/2 dozen Pumpkin Cranberry Muffins! This recipe freezes wonderfully. It’s so easy to pull a muffin out of the freezer, pop it in the microwave, slather with butter and enjoy!
Note: I use this recipe, but I substitute craisins and walnuts for the chocolate chips. I use less sugar too and the muffins are still delicious!
I don’t have a HUGE pile of food to show for my Freezer Cooking Day Hour, but I’m really happy to have these breakfast foods stockpiled to enjoy for the next few weeks!

I like to stockpile breakfast foods too. Sometimes a girl just doesn’t feel like cooking first thing in the morning and I’m one of those people that can’t function without breakfast.
That granola sounds yummy and I’ll have to try the recipe.
I like to freeze breakfast burritoes, baked oatmeal, sausage balls, and various fruits and berries for smoothies.

I will make French Toast and freeze. I have also made “Egg McMuffins” to freeze and Breakfast Burritos. I think I am going to have to try that granola and I know my kids would love some muffins…I never think to make muffins.

I go through granola making phases, its so much better homemade. But right now I am on a peanut butter and toast kick. Its just yummy to me right now 🙂

That is so funny that you ask that! I was just discussing with my husband the need to do that. I need to make things in bulk and freeze them so that I can stop buying so much junk at the grocery store.

I needed to be motivated to get some breakfasts in the freezer. 🙂 Thanks. Here’s a recipe that I’ve used to make ahead and keep in the fridge for easy breakfasts, but we eat up enough of them that there isn’t enough for the freezer. 🙂

A few kids ago, I always cooked things for my freezer! I am not sure why I stopped.. hmm you make me what to get busy freezing things. LOL!

That’s a great idea! I just spent $5 on on 6 muffin tops. This would be great for the boys, maybe I can sneak in extra vegetables!

Granola rocks!
I always have lots of breakfasts in the freezer at all times! My son refuses to touch cereal so I have 2 kinds of pancakes, 3 different muffins, precooked bacon and ham and cheese muffin bites in my freezer right now. Makes the mornings so much easier!

Totally love the substitutions you made! Every September I make big batches of cookie dough balls and freeze (unbaked) to pull out for Christmas plate gifts. My favorites are the Butterfinger cookies.

Hadn’t thought about trying the cranberries in the pumpkin muffins. I have done nuts, choc chips, or white choc chips before, but the cranberries sound yummo! Will have to give it a try next time! 🙂
