Menu Plan – Week of February 1st!
Wow! That’s weird! Can you believe that it’s already February 2010? I thought that this week would never come and now it’s here! Woot! Can’t wait for Thursday!!
We successfully made it through the Eat From The Pantry Challenge, although I did go over budget. I decided to try to eat more healthfully mid-January to get ready for Blissdom, so that required me to purchase more produce…thus blowing the budget! Oh well. It was for a good cause, right?
Our freezer and pantry need to be restocked, so I’m doing a little bit of bulk cooking for snacks and meal starters. My bulk cooking list is quite small in comparison to the TON of stuff I did last time, but I just have way too much to do this week! I’m hoping to catch up with more bulk cooking toward the end of February!
For now, here’s what we’re eating this week:
Breakfasts:
- Granola
- Pumpkin Muffins
- Fruit and Yogurt
- Eggs with Salsa and Cheese (my hubs’ specialty)
Lunches:
- Tuna Salad
- Leftovers
- Cheese and Veggie Wraps
Suppers:
- Turkey, Vegetable and Rice Soup
- Chicken Parmesan (that I didn’t get to last week)
- Homemade Pizza
