Eat From The Pantry Plan – Week 3
Since I started writing down my menu plan, I’ve made an earth-shattering discovery. Not really, but I like to think that I did. We don’t eat 5 dinner meals a week. We just don’t. Plain and simple as that.
I can’t de-program myself from cooking large amounts of food. Growing up in a house with 6 other people, I learned to cook larger quantities. So, my conclusion is that it’s okay to just cook 2-3 dinners a week. My hubby is good with that, so I am too.
The pantry challenge is going quite well, except for the fact that I’ve met my budget for the entire month. Oops! I went a little crazy buying produce on Saturday because I’m trying to eat a bunch more fruits and veggies instead of carbs and meat.
Here are some ideas I have about what we might eat this week…
Breakfasts:
Lunches:
- Tuna Sandwiches
- Hummus and Crackers
- Cheese and Veggie Sandwiches
- Leftovers
Dinners:
- Grilled Cheese Sandwiches with Tomato Soup
- Spicy Chicken and Rice Casserole
- Hawaiian Ham
Hopefully, I’ll finally get to make some dishes that have been floating from week to week. My hubby’s work schedule is constantly changing and there’s always somewhere to go or something to do. It’s really hard to have a meal plan – I’m hoping that it will get easier as Ridley gets older and (hopefully) more kids come along.

I know what you mean about trying to incorporate more fruits & veggies. We’re doing the pantry challenge too, and I find myself getting very creative! Don’t give up… it does get easier! 🙂
I know what you mean about cooking for a crowd when you don’t have a crowd to feed. I have routinely made enough for leftovers, even though I don’t particularly want to eat leftovers. My husband will slog through them, but it’s not fair to him to make him eat the same pot of beans all week long while I’m bored of them and want something different. I’ve been scaling down recipes and wasting a lot less.
I completely understand. I am one of 7 children, so cooking for 2 is completely foreign for me. Unfortunately my husband doesn’t like leftovers. We’re both trying to adjust.
I find I do not plan lunches at all. I plan a big breakfast and no lunch, big dinner the night before…no lunch needed. I understand completely.

You are so right. I have such grand plans for the week and stuff always comes up or I don’t get around to it. 2-3 meals is perfect…I’m from a big family (oldest of 7) and I cook like the army is coming over and I love my husband be he refuses to eat leftovers. So I just always invite people over.

Hey friend. If you get tired of eating the same 3 meals all week, go ahead and make the big meal but split it up in 2 pans. Freeze one of the pans for a different week. Same effort, fewer leftovers, and a “free meal” on a night you need it! 🙂

Eat from the pantry sure caught my eye. Mie is stuffed. I buy i bulk but that’s not the problem. I just forget whats in there and buy more. I really need to focus on eating what we have.
When I was young and broke we never had this problem.
