Favorite Dessert Recipe
One of our favorite desserts is definitely a Southern thing – Coca-Cola Cake! And oh my, is it ever delicious! If you love chocolate, you’ll have to try this recipe!
Coca-Cola Cake
2 cups sugar
2 cups flour
1 cup butter
3 T. cocoa
1 cup Coca-Cola
1 t. baking soda
1/2 cup buttermilk
2 eggs, beaten
1 t. vanilla
1 1/2 cups mini marshmallows, optional (I’ve never added this)
Preheat oven to 350 degrees. Sift sugar and flour together. Boil butter, cocoa and Coca-Cola. Pour over flour and sugar. Dissolve soda in buttermilk and pour in with the above ingredients. Then add eggs, vanilla and marshmallows. Pour into greased 13 x 9 pan and bake 45 minutes.
Now, the best part…
Icing:
1/2 cup butter
3 T. cocoa
6 T. Coco-Cola
1 box confectioners’ sugar
1 t. vanilla
1 cup chopped pecans
Bring to boil the butter, cocoa, and Coco-Cola. Add sugar, vanilla and pecans. Pour over cake in the pan while icing is hot.
