2 Days of Cooking

Wow! The last two days have been full of kitchen-time. Very intense kitchen-time, let me tell you! I’m so thankful for the energy and patience that God gave me. Ridley was incredibly difficult (cranky) yesterday and it’s a miracle anything got done at all…seriously. Today was much better–thankfully!

Kelly and I are planning to get together next week to have a Christmas goodies baking day! We did this last year and it was so fun. I was hugely preggo and I got covered in powdered sugar. I’ll have to dig out that picture! Ha!

For now, here’s what I got done yesterday and today.

2 Mexican Lasagnas
2 Pot Roasts with Vegetables
2 Chicken Fajitas with Veggies
2 bags Shredded Chicken
2 bags Black Beans & Pintos
5 bags Turkey Broth
2 bags Shredded Turkey
Roasted Red Pepper Hummus (from dried beans)
2 pans Twice Baked Potatoes
3 loaves Banana Bread
2 dozen Zucchini Muffins
2 dozen Pumpkin Muffins
2 batches Granola (not pictured)

WOW! I’m loving this monthly cooking marathon!

Even more miraculous– my sink and counters are totally clear and clean! *happy dance*

I will be posting the recipes for Hummus, Mexican Lasagna, Twice Baked Potatoes and Zucchini Muffins in the next few weeks. Let me know if you need any of these right away!

I must ask — how big is your freezer?!?!

I'd love to do a big cooking day like this, but our freezer is so tiny we wouldn't have enough space.

Wow! Your cooking posts make me want to learn how to cook! I know I will try soon (I graduate in less than 2 weeks, so now isn't the best time for a new adventure!)! I am curious to know what Mexican Lasagna is! It sounds yummy!

Also, what do you cook for? To freeze and have faster meals, or what? Whats the point of all this cooking? (though it looks like a blast, I LOVE to cook!)

I've been wanting to try freezing twice baked potatoes. At what point do you freeze them? How do you thaw/reheat them?

wow! i've always wanted to make a bunch to freeze, but i don't know how. sounds kinda dumb…but i guess what i mean is i don't know if you are supposed to prepare a meal all the way or just 3/4ths of the way. could you post and explain the chicken fajitas? thanks!

I am wondering about your beef w/veg. Do you freeze? How do the veggies do? Also same thing with Fajitas? Please let me know. Getting inspired to do while on Christmas Break

I tried to contact you via e-mail, but maybe you will see this info here…

The frozen veggies did super well with the pot roast that I cooked in the slow cooker.

I'm planning on making the Chicken Fajitas this week. I bagged and froze the veggies separate from the chicken and marinade because I'm planning on sauteing the veggies. My sister has done this before and the frozen veggies work great!
