Poor Man’s Pizza

Both my husband and I grew up loving Poor Man’s Pizza.  We didn’t call it that, but I’m naming it right now.  Ha!  My husband’s family makes Poor Man’s Pizza with slices of bread and my family uses flour tortillas.  Either way, it’s delicious, frugal and perfect for lunch or dinner in a pinch!

Poor Man’s Pizza

Ingredients:

  • Slices of bread or flour tortillas (or both)
  • Pasta sauce
  • Pepperoni
  • Red onion, chopped
  • Bell pepper, chopped
  • Dashes of Italian seasoning, Onion powder, Garlic powder
  • Parmesan Cheese
  • Shredded cheese (mozzarella or cheddar)

1. Place your tortillas or slices of bread on baking sheet.

2. Spread with pasta sauce.  Add pepperoni, vegetables, herbs and spices.

3. Sprinkle with cheeses.  Bake at 400 degrees for 4-5 minutes until cheese is melted.

4. Pure deliciousness!

You can enjoy your “pizza” open-face style…

  1. Looks yummy! I will have to try those! I bet my kids would love them. They don’t really like pizza crust.

    We used to have poor man’s Thanksgiving. We’d heat deli turkey slices with a jar of gravy, make Stove Top stuffing, and make some mashed potatoes and a veggie. Not the healthiest meal, but much quicker than doing a whole Thanksgiving meal.

  4. YUM! We just call them tortilla pizzas, but my kids typically prefer them over regular pizza!! It’s usually what I make for pizza night! Personally, I like how easy they are since there’s no dough involved!!

  6. I was raised on Poor Man’s Pizza & in college discovered Poor Girl Soup lol so yes, many meals still consist of both!

  7. We do these in the toaster oven–Even better in the toaster oven so you don’t have to heat up the whole house!

  8. I had never had these growing up and invented them when I was stationed in the Middle East..the only pizza was dominos, no New York style. So I bought some bakery crusty bread and added spaghetti sauce & cheese and fell in love! When I came back stateside, I started to use regular whole wheat sandwich bread, which sounds weird for pizza but it’s so yummy!

  9. I made this for my son for lunch last week and he absolutely loved it (& the name)!! I also made a mexican version with refried beans, taco sauce and cheese. This is definitely a favorite lunch at our house now!!! It is so good and so easy.

  10. Ha! I like the name! We used to eat it growing up on English muffins. And, when my husband and I were on staff with Campus Crusade for Christ and had to live in a hotel room for several weeks in the summer or during conference time we would bring our toaster oven and make them on bagels. Lol, sometimes when hotels would have free breakfasts and would give free bagels we’d use those and then it was really a poor mans pizza. Breakfast and lunch via the hotel breakfast!

  11. Looks really good. i need to incorporate this into gluten free, hmmmmm. Before going gf i use to make pizza all the time with english muffins, Yummy! if anyone comes up with a good tortilla to use that is gf let me know. I know corn is, but corn doesn’t hold up that well. Although, corn quis-a-dillas are going through my head right now, hmmmm. lunch, perhaps?!:)

    1. Hey Megan! I’ve actually used corn tortillas for this recipe. As long as you don’t use too much sauce they tortillas hold up quite well. 🙂 Hope that helps!!

  12. You can also bake just the flour tortilla first to make a crispy shell you apply everything else to. Works well.
