Amelia Bedelia Freezer Cooking

Hey there! I have been working on my to-do list of things to get accomplished before the new baby arrives in approximately three weeks. WHAT????! Freezer cooking for the slow cooker has been a top priority and I finally got 11 meals made today in two hours!

Several friends asked me what I made and how I did it, so I thought a quick blog post would make it easy to share.

Disclaimer – I am NOT by any means an expert freezer meal cook. Honestly, I dislike following recipes unless it’s flour, sugar and baking powder or baking soda.

I like to cook like Amelia Bedelia with a little of this and a little of that, so that’s how I freezer cook too. My family never seems to mind. They just rave about how good things taste. Haha!

So, you might just need to put your Amelia Bedelia hat on and go with it. 😉

Meals I made: 

  • Italian Chicken
  • Italian Sausage
  • Beef Stew
  • Chicken Tacos {2 batches}
  • Dijon Chicken {2 batches}
  • Cranberry Pork {not Paleo}
  • Taco Soup {2 batches}
  • Stuffed Peppers

I already had the basics {as well as our grass-fed beef} on hand, but here are the items that I bought just for prepping these meals.

From Costco:

  • Organic chicken breasts {You can’t ever have too many of these!}
  • Organic diced tomatoes
  • Aidell’s chicken sausage
  • Onions
  • Organic frozen vegetables

From Kroger:

  • 12 bell peppers {2 yellow, 2 red and 8 green}
  • Celery
  • Organic beef stock
  • Dijon mustard
  • Pork shoulder

My homemade taco seasoning recipe is fabulous and yes, I eyeball all those teaspoons. 😉

When Cameron went down for his nap I pulled everything out and got started. My list looked like this…fancy schmancy.

I used mixing bowls to hold freezer bags while I filled them up with all the ingredients. It was such a simple process.

I washed my hands A LOT.

In just two hours I had all eleven meals put together and in the freezer. Once I got everything cleaned up and the dishes done the whole process was 2.5 hours. And my preggo mama back was t.i.r.e.d.

But it was totally worth it! I will have some spaghetti squash, sweet potatoes and tortillas on hand to go with different meals.

Breakfast and lunch are the easiest meals for us, but dinners are definitely challenging. I’m hoping that having meals already prepared will help out!

  1. This is great! Ive been wanting to do some crock pot meals for us too. It just makes life so much easier. I know when we lost Isaac, so many friends gave us crockpot freezer meals for the crockpot, it was such a blessing since the doctor told me I was not allowed to pick up a pan for 4 weeks! So those freezer meals came in handy for both lunch and supper!

    I love that you dont use recipes too! Ive never been good at reading directions or recipes. My mom was always the opposite when I lived at home, she used to measure out everything for me. It drove me nuts. I told her recipes are just guidelines, they dont always need to be followed to a tea! Have fun with it. Experiment and put in things you love regardless if it calls for it or not! She’s always amazed when I create my own stuff daily.

    Working at Curry’s may or may not have made my creative juices run all the more when it comes to creating mouth explosding creations. I miss working there so much! If only they paid me better. loved the post!

    I was wondering how your stuffed peppers turned out by freezing them uncooked. Trying to figure out if i should bake and then freeze or just throw them together and toss in the freezer uncooked like you did. Thank you !!
