Taking Care of Me – What I’m Eating

Happy Thursday! I hope y’all are having a great week! We had a crazy busy weekend with a fundraiser relay race in South Carolina. I ran 6.37 miles in three different small spurts. It was fun. My sweet husband ran 20 miles. Haha! So I’m small potatoes, but it’s the most I’ve ever run in a 24 hour period.

Several people have asked me lately what I’ve been eating, so I thought I would share a quick blog post of some of my meals in a Taking Care of Me – Part 2. 🙂 I have been very careful to avoid grain, dairy and sugar {except for some naturally occurring sugar in fruit}. The difference in my digestion is amazing. I just feel so much better. This is what works for me. Your body is different than mine, so figure out what works for you!

What better place to start than breakfast

I can’t say enough good things about Aidell’s Chicken Apple Sausage. I love the stuff and I could eat it every day. Costco has it for a great price. I sometimes just brown it by itself and sometimes I brown it with some veggies and an egg. It’s just whatever I’m feeling at the moment. 🙂

If I don’t have sausage for breakfast, I usually have a Balance Complete vanilla cream shake. This stuff is fabulous. It is a non-GMO product with organic whey and no soy. LOVE it. I use coconut milk and usually I add frozen fruit and sometimes a drop or two of an essential oil. I use my Ninja blender and I’m good to go.

Lunch is my favorite meal and it’s usually my biggest meal of the day. I eat A LOT of fruits and veggies…and hummus. I love me some hummus. I have fallen in love with this hummus from Costco. It is so cost effective. I limit myself to 2-3 tablespoons of hummus a day.

Another lunch. I love having 1/4 cup of raw almonds for the extra boost of protein and good fat. And yellow peppers? They are my BFF. I can’t get enough! They are so sweet and delicious when dipped in hummus especially.

Dinner is a bit of a different ballgame for me. And I don’t have any pictures. Sorry! I usually have some kind of meat and vegetable, but no potatoes. I’ve been avoiding those because they just don’t make me feel good. I love getting steak and steamed broccoli or a good salad when we go out. It just depends on what we’re in the mood for. It’s sometimes a pain to fix my own food separately from the rest of my family’s dinner when their dinner doesn’t align with what’s best for me. But it’s worth it.

Snacks – Oh my word, I LOVE Barney Butter. Where has it been all my life?! The smooth almond butter is like nothing you’ve ever had before…except the smoothness of Jif peanut butter. I’m not kidding. There’s no grainy texture in Barney Butter! Yum. If I need a pick-me-up, I just have a spoonful of almond butter.

I also love to snack on…wait for it….veggies and hummus….and almonds or fruit. It just depends on what I’m in the mood for. I also love Young Living’s Slique Bars. They are delicious.  I sometimes have dates {limited amount}, cashews, raisins or anything like that.

  1. That sausage looks great. I will have to try some of that. I am curious if your children ask you questions as to why you don’t eat the same meal at dinner that they do. They must notice? What do you say to them? This is something I would worry about in my household and would love any tips. Thanks for a great post!

  2. Oh don’t even get me started on the Hummus at Costco … and OMG that sausage … Two of my FAVES!!! And we are doing the same thing right now Myra … you’re an inspiration … I’m on a “takin’ care of me” journey too … trying to take off 45 lbs. and get in better shape 🙂
