Good morning, lovelies!  Several weeks ago, I instagrammed a photo of the Easy Mexican Chicken & Rice bowls I made for dinner. {This is not an unusual occurrence, but everyone wanted the recipe.} I made it again measuring everything as I went along, so I could share this delicious and easy recipe with you! It is drool-worthy.

This Mexican Chicken and Rice Bowl recipe will have your tastebuds begging for more! Actually, it’s on the menu again this week just because my family loves it so much.

My Easy Chicken & Rice Bowls are an easy meal especially with kids. Just give everyone a bowl, napkin and fork {or spoon} and call it a day. 🙂

    1. Hello – I am making this right now – can’t wait! But oops – I started making the rice first without seeing that it was supposed to go with the Rotel and tomatoes- oh well, I will add it to all the other yumminess and I think it will be just as good!! Thanks for sharing your super great recipes!

  2. Hi Myra! How did you take this to a potluck? Just put it in a large pyrex dish?? Also, did you have the toppings on the side or just put a few on top?? Thanks! My kids have a picnic day on Thursday and I thought I would bring this… I just thought I would ask how you transported it and served it! It looks like a crowd pleaser!!! 🙂

    1. Hey Courtney! I made the recipe and then put it in my crockpot on keep warm and it worked perfectly. I also added some black beans and corn to the crockpot and stirred it up. I served it with sour cream and cilantro on the side. 🙂

  3. I made this for my family tonight using leftover shredded chicken that I had when I made my own chicken broth, and it was a hit. This will go on our menu at my house for sure. Thanks so much for sharing this with everyone Myra!
