Good morning, lovelies! I hope you are having a great week! I’m really excited to share my Roasted Vegetables with y’all today. This recipe is a family favorite and it can be modified to include vegetables that you love. Roasted vegetables are such an easy and delicious side dish.

  1. I’m hungry already!!! I’ve added Brussel sprouts cut in half too. But I didn’t think to cover and add a bit of water first to help them get done quicker. I usually don’t cover mine but ill try it this way and uncover the last 15 minutes after a good stir. It’s a drizzly dark day so it looks mighty healthy and delicious!
