Strawberry Asparagus Salad

Friends and family have been bringing meals for us which has been such a blessing during our babymoon. One friend brought a wonderful salad that had raw asparagus in it which I loved! I’ve been craving salads, so I came up with this Strawberry Asparagus Salad to curb my cravings.

The ingredients are relatively simple for making this Strawberry Asparagus Salad. Romaine hearts, fresh asparagus, baby spinach, strawberries, red onion, feta cheese and walnuts {not shown} complete this dish.

First, wash and tear {or cut} romaine hearts. Then add baby spinach. I like to take the hard stems off the spinach.

Then, wash and cut the asparagus on the diagonal and add it to the salad. Use only the tender pieces.

Top the salad with sliced red onion, sliced strawberries, crumbled feta cheese and chopped walnuts. I forgot to add walnuts to mine until after I took photos. Oops! 🙂

My favorite “dressing” is simple oil, balsamic vinegar and a bit of real salt. It’s so easy, delicious and allows the salad ingredients to shine.
