Southern Cornbread Recipe

/

Cornbread in the South is a vital part of life. It’s the perfect accompaniment to Ham and Bean Soup, Chili and New Year’s beans, ham and greens.  Or just eat it with butter and jam! 🙂

I love cornbread and am thankful for a heritage of amazing cornbread makers.

Southern Cornbread

{my momma’s recipe}

  • 1 cup yellow corn meal
  • 1 cup all-purpose flour
  • 3 T. sugar
  • 4 t. baking powder
  • 1/2 t. salt
  • 1 cup milk
  • 1 egg
  • 1/2 cup oil {plus oil to heat in pan}

Preheat oven to 425 degrees.  In a seasoned cast iron skillet, add oil about 1/3 deep in the skillet.  Put the skillet in the oven while you prepare the batter.

Combine corn meal, flour, sugar, baking powder and salt in a bowl.  Add milk, egg and oil and beat until smooth.

Carefully remove the skillet from the oven.  To make sure the oil is hot enough, flick a little bit of corn meal in the pan to see if it sizzles. If it does, the oil is ready.

Add the cornbread batter and bake 20-23 minutes or until browned and a toothpick comes out clean.

Enjoy with butter {or yummy preserves, or both}!

  3. I love cornbread but I’ve never made it. I never had to because Mom was always around to make it for me. Now that I’ve relocated from Louisiana to New England, I need to learn to do it myself. Thank you for sharing your recipe with us. It looks so yummy! Have a great Tuesday, Candace
