Mediterranean Pizza with Smoked Chicken and Goat Cheese

This past weekend I was inspired by a tweet, from my sweet friend Jessie Leigh, that said her family was enjoying a delicious pizza including smoked chicken, caramelized onions and goat cheese. Yum!

Today, on a whim, I decided to create a recipe for Mediterranean Pizza with Smoked Chicken and Goat Cheese.  My adventurous, inner-chef was needing a challenge!  I was not disappointed in the result and neither was my hubby!  🙂

So, SO good.  Melt in your mouth delicious!

Mediterranean Pizza with Smoked Chicken and Goat Cheese

  • Pizza dough (My Easy Homemade Recipe)
  • 1/2 cup pizza sauce or pasta sauce
  • 2 T. basil pesto
  • 1 1/2 chicken breasts, smoked and chunked
  • 4-5 roma tomatoes, sliced
  • Fresh basil leaves
  • Goat cheese, sliced
  • 1 medium onion, sliced and caramelized

Press pizza dough onto pizza stone.  Spread with pizza sauce and pesto.  Add, sliced tomatoes, chunked chicken breast, basil leaves, goat cheese and caramelized onions.

Bake pizza at 400 degrees for 12-15 minutes or until crust is browned.

Let the pizza sit for 3-5 minutes before slicing.

Smoked Chicken Tip: I used my little countertop grill to cook the chicken.   I sprinkled “Liquid Smoke”, garlic powder, salt and pepper over the chicken as it cooked.  Liquid Smoke is pretty much the bomb when it comes to “grilling” indoors!

  1. Mmmm… looks good! I loved the one I ordered and yours looks super similar! I had to choose between “white” and “red” and I actually picked white, so mine had ricotta on it and that was delicious. But, to be honest, I had a hard time choosing and the red version looks fabulous too! 😀
