My favorite corn dish is what we call “corn casserole,” but it’s sort of a Mexican corn souffle.

1 can creamed corn
1 small can of diced green chiles (4 oz)
1/4 cup corn meal
2 eggs, beaten lightly
1/4 cup veg oil
1 cup shredded cheddar cheese
1/2 tsp garlic powder
1/2 tsp salt

Mix all the ingredients and pour into a greased casserole dish. Bake at 375 for 45 min. Yum!

I adore corn like this! I sometimes pour in a tablespoon or two of cream just to make it even more insanely delicious.
