Easy Beef and Bean Dip

A couple of weeks ago (during the pantry challenge), I needed to make a dish to take to an church fellowship on Sunday night. So, I came up with this simple and yummy recipe.

Easy Beef and Bean Dip

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves minced garlic
  • 2 cans pinto or kidney beans (I used pinto beans from my freezer.)
  • 1 can Rotel
  • 1 pkg cream cheese
  • 1 cup shredded cheddar cheese
  • 1 t. cumin (you may want to add more to taste)
  • 1 pkg taco seasoning
  • Salt to taste.

Brown ground beef with onion and garlic.  Drain.  Mix all ingredients in a slow cooker.  Cook on high for 2-3 hours or until dip is heated through.  Keep on low or warm until ready to serve.   Serve with tortilla chips.  This could also be served as a filling for beef and bean burritos.  Enjoy!
