Texas Caviar

On Christmas night, Prince Charming told my 11 year old brother that Texas Caviar is catfish eggs. Ha! This stuff is way better than (ugh!) catfish eggs would be. I could totally eat this Texas Caviar like a salad – with a fork!

I researched several Texas Caviar recipes and even wrote ingredients on my grocery list, but somehow a few ingredients never made it into the grocery cart. So, I made up my own recipe.

Texas Caviar
  • 1/2 large red onion, chopped
  • 1 yellow bell pepper chopped
  • 1 can sweet corn, drained
  • 2 cans black eyed peas, drained
  • 1 can Rotel, drained
  • 1 T. minced garlic
  • 3/4 cup balsamic vinaigrette
  • 1/2 t. cumin
  • Salt and Pepper to taste
  • 1 bunch fresh cilantro, chopped

Mix onion, bell pepper, corn, peas, Rotel and garlic. Pour vinaigrette over and mix. Add cumin, salt and pepper. Mix well. Refrigerate for at least 2 hours. Add cilantro right before serving. Serve with tortilla chips (or forks. Ha!). Enjoy!

  1. Love this!! A girlfriend of mine served some with (brace yourself) Doritos one time. It was actually really good. If you haven't tried it you should just once to see if you like it. She served it with both Doritos & Tostitos actually but everyone kept digging in with the Doritos!

  4. Mmm! Texas Caviar is delicious! My group of friends and our husbands have a monthly Supper Club–last month the theme was Mexican and someone brought this for an appetizer. Yum-o!
